Smothered Pork Chops with Creamy Gravy and Potatoes

Juicy pork chops, golden potatoes, and rich, flavorful gravy — it’s the ultimate comfort food experience.

🛒 Ingredients (Serves 4)

Salt 1 tsp
Black pepper ½ tsp
Paprika 1 tsp
Garlic powder 1 tsp
Vegetable or olive oil 2 tbsp

All-purpose flour 3 tbsp
Chicken broth 2 cups Low sodium preferred
Heavy cream or whole milk ½ cup
Dried thyme (or fresh) 1 tsp dried / 1 tbsp fresh
Baby potatoes 2 lbs Halved or quartered if large
Butter 2 tbsp
Fresh parsley As needed Chopped, for garnish

👩‍🍳 How to Make Smothered Pork Chops

1️⃣ Season the Pork Chops
Pat the pork chops dry with paper towels. Season both sides evenly with salt, pepper, paprika, and garlic powder.

2️⃣ Brown the Meat
Heat oil in a large skillet or Dutch oven over medium-high heat.
Sear the chops for 3–4 minutes on each side until nicely browned.
Transfer to a plate and set aside.

3️⃣ Sauté the Aromatics
In the same pan, add the sliced onions and cook for about 5 minutes until they become soft and golden.
Add the minced garlic and cook for another minute until fragrant.

4️⃣ Prepare the Gravy
Sprinkle the flour over the onions and stir well to coat.
Gradually whisk in the chicken broth until smooth and lump-free.
Pour in the cream, add thyme and butter, then let the mixture simmer for about 5 minutes until it thickens.

5️⃣ Add the Potatoes and Pork
Gently place the potatoes into the creamy gravy.
Lay the seared pork chops on top and spoon some of the gravy over them.

6️⃣ Simmer to Perfection
Reduce the heat to low, cover the pan, and cook for 25–30 minutes.
Stir occasionally, cooking until the potatoes are tender and the pork chops reach an internal temperature of 145°F (63°C).

7️⃣ Serve and Enjoy
Sprinkle with chopped parsley before serving.
Serve hot with plenty of extra gravy poured over each portion
