How to Make Ranch Guacamole Dip

I first had Guacamole Dip at my friend’s house. She is a vegan, which means she is always carrying around great recipes. For some reason, it had never occurred to me to make guacamole on my own. Okay, I have taken avocado toast and sometimes have avocado in my salad but never guacamole. I remember that first bite, it was a revelation. The consistency was smooth, the taste was vibrant, and the balance of sour and hot was just right. I told her that she had to prepare it every time I visited until I got tired of it. But guess what? It never got to the point where I could get bored of guacamole. What person would not want to take a spoon and taste some smooth and creamy green paste?

Guacamole itself is pretty perfect, right? But then I discovered something even better: Ranch Guacamole Dip. I found the recipe on 12 Tomatoes and knew I had to give this a shot. I went to my friend’s house and pleaded with her to cook it for me but she said, ‘It seems very simple and straightforward, you should try making it yourself’. And so, I did.

  • 1 cup buttermilk
  • 2 ripe avocados, cut in half, removed from the pit, and skin removed
  • 1/4 cup chopped fresh cilantro
  • 3 teaspoons dried dill weed
  • 1/4 cup chopped parsley
  • 1 teaspoon lime juice
  • Season with salt and pepper to taste.
  • 1 clove of garlic, minced
  • 3 scallions, chopped
  • 1 small tomato, diced
