White Chocolate Blackberry Poke Cake 🍰

Ingredients:

For the Cake:

1 box white cake mix (plus ingredients listed on the box: eggs, oil, water)
1 cup white chocolate chips
For the Filling:

1 can (14 oz) sweetened condensed milk
1 cup blackberry jam
For the Blackberry Ganache:

1 cup fresh blackberries
1/4 cup granulated sugar
2 tablespoons water
1 cup white chocolate chips
1/2 cup heavy cream
For the Decoration:

Fresh blackberries
Whipped cream
Directions:

Bake the Cake:

Preheat oven: Preheat to 350°F (175°C).
Prepare batter: Follow the package instructions for the cake mix. Stir in 1 cup white chocolate chips.
Bake: Pour batter into a greased 9×13-inch baking pan and bake as directed on the package. Let it cool completely.
Prepare the Filling:
4. Mix filling: In a small bowl, combine sweetened condensed milk and blackberry jam.
5. Poke holes: Using the handle of a wooden spoon, poke holes all over the cooled cake.
6. Pour filling: Pour the filling mixture evenly over the cake, ensuring it seeps into the holes.

Make the Blackberry Ganache:
7. Cook blackberries: In a saucepan, combine fresh blackberries, sugar, and water. Cook over medium heat until the berries break down and the mixture thickens, about 10 minutes. Strain to remove seeds.
8. Melt chocolate: In a heatproof bowl, pour the hot blackberry sauce over white chocolate chips and heavy cream. Stir until smooth and combined.
9. Cool and pour: Allow the ganache to cool slightly, then pour it over the cake.

Decorate the Cake:
10. Spread whipped cream: Spread whipped cream over the top of the ganache.
11. Add fresh blackberries: Decorate with fresh blackberries.
